Brown Sugar Cinnamon Pop Tarts (Vegan)

Ingredients
Filling
Light Brown Sugar / ¾ cup
All-Purpose Flour / 1 Tablespoon
Ground Cinnamon / 1 Tablespoon
Vegan Butter, melted / 2 Tablespoons
Vanilla Extract / 1 Teaspoon
Dough
All- Purpose Flour / 2 Cups
Whole Wheat Flour / ½ Cup
Ground Cinnamon / 1 Teaspoon
Vegan Butter, cold-cut into small pieces / 1 Cup
Cold Water / ½ Cup
Non-Dairy Milk, for brushing / ¼ Cup
Icing
Confectioners’ Sugar / 2 cups
Vanilla Extract / 1 Tablespoon
Ground cinnamon / 1 ¼ Teaspoon
Water / 3 Tablespoons
Turbinado Sugar- for sprinkling (can also use cinnamon sugar)
Directions
Step 1: Combine the filling ingredients in a bowl, mix well and set aside
Step 2: In a food processor, add the all- purpose flour, whole wheat flour, cinnamon, and the cold chunks of vegan butter. Pulse until it starts to mix and clump together forming small marble sized balls. Add ½ cup cold water, about a tablespoon at a time until the dough comes together and forms a large ball.
Step 3: Place the dough onto a floured surface and roll out to approx. 1/8 inch thick. Cut the dough into evenly sized rectangles (I like to use a pizza cutter for this)
Step 4: Line a baking sheet with parchment paper
Step 5: Begin to assemble your pop-tarts. To do this take one square and place onto the lined baking sheet, then scoop about a tablespoon of filling and place rounded directly into the middle of the square. Next take your non-dairy milk and brush evenly around all four sides. Take a second rectangle and lay over the other piece with the filling and seal the edges, crimping them with the back of a fork. Poke a few holes in the top with the fork, and repeat until they are all filled, crimped, and have a few small pokes.
Step 6: Place the baking sheet with your pop-tarts in the fridge covered for 1 hour
Step 7: Preheat the oven to 400 degrees F. Bake for 15-20 minutes until the outsides begin to have a golden color (usually mine bake for around 18 min or so)
Step 8: Cool Completely
Step 9: Combine the powdered sugar, cinnamon, vanilla and water in a bowl and whisk together until smooth. If your icing is too thick, you can thin it out by adding more water about 1 teaspoon at a time.
Step 10: With a spoon, place a layer of icing on top of the pop-tarts and sprinkle on your turbinado sugar or other toppings. Uncovered, allow to harden completely- this usually takes a few hours.
